Tarte Tatin


I made a wonderful Tarte Tatin yesterday. I recommend doing this while playing Andre Previn's "A Carnegie Hall Christmas" in the background. Frederica Von Stade and Kathleen Battle are sublime. And so what if it's Dec. 27? It's important to keep Christmas in the house for as long as possible -- especially yesterday, when the temperature outside, bizarrely, nudged 70 degrees.
The tart was gone by midnight... demolished by little chickens pecking away.
Here's the recipe, courtesy of Gourmet magazine. The secret is to have good puff pastry on hand (I got mine from Trader Joe's) and to cook the apples in an iron skillet, enough to steam away a lot of the apple's juices so the caramel takes center stage. Some recipes call for more butter and sugar, but it's not really necessary.... the result is still rich burnt sugar goodness.

Mackenzie,

The tart is mouth watering but my body is rebelling. Your timing is terrible. Over the last few days, at all of the holiday parties, I have eaten enough to sustain a small village for a year. The tart recipe will have to wait at least until March when I can again squeeze into my clothes.

Mmm. I'd forgotten about tarte tatin. Next fall, when we have local apples galore...

Oof. I can't even think about eating anything right now (well, except for those Christmas M & M's I had for breakfast...).

Glad I'm not alone at clinging to Christmas for a few extra days. I'm giving myself until Thursday and then giving in to the pack-it-all-up requirements.
